The ingredients in this chocolate kit are chosen for a reason. Raw cocoa is one of the highest sources of antioxidants on the planet, making it a wonderful ingredient in the fight against free radicals in the body. These antioxidants are called flavonoids and decrease cardiovascular disease. They help strengthen the blood vessels and fight inflammation. They lower LDL (bad cholesterol) levels. Antioxidants work for about 5 hours after eating them. Eating some chocolate 3 times a day will keep the antioxidants working continually. That is why we instruct you to make 21 pieces per kit, one weeks worth. Cocoa is also rich in magnesium and potassium.
The cocoa butter is in itself good for you. It is a healthy, unsaturated, omega-6, fat containing oleic acid that raises HDL (good cholesterol) levels beside being very good for your skin.
Coconut Palm Sugar
Of the research I have followed, the benefits of cocoa are very good except that there has to be sugars to make it palatable. Processed sugar is a true detriment to the healthy effects of cocoa which is why I have included coconut palm sugar instead. Coconut sugar isn’t from the nut, but from the tree itself, which is why it is called palm sugar. This sugar is not a fructose that goes to your liver and stores as fat. It is a glucose that is burned by the cells. Palm sugar is low on the glycemic index and won’t spike your blood sugar levels. It has its own actual nutrients! Good stuff.
Raw Unfiltered Colorado Honey
Raw, unfiltered Colorado honey is also included as an anti-allergen with bee pollen and other nutrients that also acts as a binding agent that also helps the flavor and texture.
Some reports stat that milk tends to negate the effects of the cocoa. That makes milk chocolate and hot cocoa delicious, but not beneficial. Milk also adds fats that aren’t wanted.
Raw ingredients mean that they have never been heated above 120 degrees. Heating destroys the antioxidants taking away the health benefits. All our ingredients are certified as raw. We don’t want to heat things up to make hard bars because of the lessened benefits. As our chocolate mixture is laid out to dry some, it might get a little sticky, but it will stay soft and will melt in your mouth for a long time.
